Nummy Yummy Burger

Cowboy Burger

Ingredients:
  • 2lbs ground beef
  • 4 hamburger buns
  • salt
  • ground black pepper
  • garlic powder
  • 4 slices Swiss cheese
  • ½ cup BBQ sauce
  • 1 cup French fried onions
  • 1 package fresh sliced mushrooms
  • 2 tablespoons butter
Directions:
  1. Shape 4 patties out of the ground beef. Season both sides with salt, black pepper, and garlic powder. 
  2. Lightly grease an outdoor grill or indoor grill pan. Heat to medium high heat. 
  3. Add the burger patties and cook turning once until fully cooked (the internal temperature has reached 160 degrees). During the fast few minutes of cooking top each patty with a slice of Swiss cheese.
  4. While burgers are cooking melt butter in a sauté pan over medium high. Add mushrooms and sauté for 15-20 minutes or until tender.  In a small sauce pan, heat BBQ sauce.
  5. Split hamburger buns in half. Place each hamburger patty on the bottom half of the bun. Top with mushrooms, French fried onions, and BBQ sauce. Place the top half of the bun over the BBQ sauce.

There isn't actually porcupine in these!

Bruce's Porcupine Meatballs
Ingredients:
  • 2 c minute rice
  • 1 lb. Hamburger meat
  • 2 cans tomato soup
  • 1 egg
  • 2 tsp.Worcestershire sauce
  • dash hot sauce
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1/2 tsp. oregano
  • salt and pepper to taste
Directions:
  1. Mix ½ can tomato soup with hamburger, 1 c. minute rice and egg. Season to taste. 
  2. Roll into balls. Place in frying pan. Lightly brown.
  3. Mix remaining tomato soup with 3/4 can water, worcestershire sauce, and hot sauce. Add some more of the seasonings, to taste. 
  4. Pour tomato soup mixture over top of meatballs. Fry together at medium-high heat until meatballs are cooked all the way through.
  5. Cook 1 c minute rice according to package instructions. Serve meatballs over rice.

Wanna Be P.F. Chang's Lettuce Wraps
Ingredients:
Pouring Sauce
  • 1/4 cup sugar
  • 1/2 cup warm water
  • 2 tablespoons soy sauce
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons ketchup
  • 1 tablespoon lemon juice
  • 1/8 teaspoon sesame oil
  • 1 teaspoon hot water
  • 1 tablespoon dijon mustard
  • 2 cloves garlic, minced 

Stir-Fry Sauce

  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1/2 teaspoon rice wine vinegar

Chicken Stir-Fry

  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons sesame oil
  • 2 boneless skinless chicken breasts, cubed to 1/2″
  • 1 – 8oz can sliced water chestnuts, minced to the size of corn kernals
  • 1/2 cup mushrooms, minced to the size of corn kernals
  • 1/2 onion, chopped fine
  • 3 cloves garlic, minced fine
  • 6 large leaves of iceberg lettuce or nappa cabbage

Directions:

  1. In a large bowl, dissolve sugar in 1/2 cup warm water, then add soy sauce, rice wine vinegar, ketchup, lemon juice and sesame oil. Mix well and throw in the fridge until you’re ready to eat.
  2. Just before serving, combine 1 teaspoons hot water with dijon mustard and garlic and mix in small bowl. Add to the pouring sauce, 1/2 a teaspoon at time to taste.
  3. Prep the stir fry sauce by mixing soy sauce, brown sugar, and rice vinegar in a small bowl.
  4. Combine oils and add to wok or large frying pan. Heat oil over high heat until it glistens, about one minute. Add chicken and saute until mostly cooked through, about 5 minutes.
  5. Turn the heat under the wok down to medium-high. Add another tablespoon of olive oil to the pan, wait one minute, and then add garlic, onions, water chestnuts, mushrooms, and the stir-fry sauce you prepared earlier. 
  6. Stir-fry everything until the mushrooms have cooked through, about 4 minutes, and remove to a serving dish.
  7. Serve stir-fry with iceberg lettuce or nappa cabbage leaf wraps and top with pouring sauce.
**Variation: you can do the same thing with ground beef, if you like.

easy but delicious classic

Beef Stroganoff
Ingredients:
  • 1 1/2 c egg noodles
  • 1/2 lb hamburger
  • 1/4 c onion, chopped
  • 1/2 can cream of mushroom soup
  • 1/2 c sour cream
  • 2 Worcestershire sauce
  • 1/2 tsp. garlic powder
  • salt and pepper to taste
  • 1/4 c fresh or canned mushrooms (optional)
Directions:
  1. Cook egg noodles according to package directions. Drain noodles.
  2. Meanwhile brown hamburger with salt, pepper, and garlic powder.
  3. Add onions and cook a few more minutes. Dran fat.
  4. Stir in soup, sour cream, Worcestershire sauce. Serve over noodles.

A More British Shepherd's Pie

Shepherd's Pie
Ingredients:

  • 1 pound ground beef or lamb
  • 2 tablespoons vegetable oil
  • 1 medium onion sliced
  • 1 clove of garlic minced
  • 1 jar Heinz beef gravy or one packet beef gravy mix or mix: 1 tablespoon all-purpose flour, 1 cup chicken stock and 2 tablespoons tomato paste)
  • 1/2 teaspoon salt and fresh black pepper to taste
  • 1 carrot (optional)
  • Mashed potatoes
Directions: 
  1. Preheat oven to 350F 
  2. Using a skillet on stove top and medium heat, brown the meat. Break up all clumps until it is evenly crumpled.
  3. Drain the grease from the meat and remove meat from skillet to set aside for a few minutes. Wipe out grease from skillet using paper towel. 
  4. Pour vegetable oil in skillet and sweat onions (soften but not colored) and add garlic. 
  5. Pour ground beef or lamb back into skillet with onions and garlic and combine.
  6. Add gravy, carrot, salt and pepper.
  7. Raise the heat and bring to a simmer for about 15 minutes (until carrot is softened). 
  8. Remove from heat, place meat in 9-inch deep baking dish and top with prepared mashed potatoes. I also sprinkle some Parmesan cheese on top, yum!
  9. Bake Shepherd's Pie for approximately 45 minutes (bubbling around edges and mashed potatoes turns a deep yellow almost brown color)

This is another EASY one...

Sloppy Joe's
Ingredients:
  • 2 lbs hamburger
  • 1 large onion, chopped
  • 1/2 tsp. curry powder
  • 1/2 tsp. chili powder
  • 1/4 tsp. dry mustard
  • 1 can diced tomatoes
  • 1 can tomato sauce
  • salt and pepper to taste
Directions:
  1. Brown meat and onion together.
  2. Add seasonings, tomatoes, and sauce. Simmer for 30 minutes stirring occasionally.

I absolutely LOVE Italian food. I could eat it all day EVERY day... Mmmm

Lasagna
Ingredients:
  • 1 lb. ground beef
  • 1/2 onion, chopped
  • freshly sliced mushrooms
  • 1 32 oz. can marinara sauce (spaghetti sauce)
  • 2 cloves garlic, crushed and minced
  • 1 tsp. fresh basil or 1/2 tsp. dried basil
  • 1 tsp. fresh oregano or 1/2 tsp. dried oregano
  • 1 tsp. fresh rosemary or 1/2 tsp. dried rosemary
  • salt and pepper to taste
  • 2 c. ricotta cheese or cottage cheese
  • 1/2 c parmesan cheese
  • 1 egg
  • 2 tsp. fresh parsley or 1 tsp. dried parsley
  • mozzarella cheese
  • lasagna noodles
Directions:
  1. Preheat oven to 350 degrees.
  2. Brown beef with garlic, onions, and mushrooms. Drain off juices.
  3. Add marinara sauce, 1/2 can of water, oregano, basil, rosemary, salt and pepper.
  4. In a separate bowl mix egg, ricotta cheese, parmesan cheese, and parsley.
  5. In a 9x13 glass casserole dish, put just enough sauce to cover the bottom. Cover the sauce with a layer of noodles. Spread half of the cheese mixture on the noodles. Put 1/3 of the remaining sauce on top of the cheese mixture. Grate mozzarella cheese on top of the layer of sauce. Put another layer of noodles on top of the mozzarella cheese. Layer the rest of the cheese sauce on the noodles. Put a layer of sauce, leaving enough to put on top of the next layer. Grate mozzarella cheese on top of the layer of sauce. Put one last layer of noodles and cover with the rest of the sauce. Add a layer of mozzarella cheese on top.
  6. Cover with tin foil and bake for 35 mins.
Some options for changing the flavor of the lasagna:

  • If you want to give it a little bit more of a kick, just a slightly spicier flavor, you can add 1-2 tsp. cayenne pepper. The more you add, the spicier it will be!
  • If you prefer a slightly sweeter flavor you can add 1 tsp.-1 T brown sugar depending on what you prefer.
  • You can also add some sausage in with the hamburger meat to make 1 lb. of meat.

Just Another Homestyle Meal

Meatloaf
Ingredients:
  • 2 eggs, beaten
  • 3/4 c. milk
  • 2/3 c. fine dry bread crumbs or 2 c. soft bread crumbs
  • 1/4 c finely copped onion
  • 2 T snipped fresh parsley
  • 1 tsp. salt
  • 1/2 tsp dried leaf sage, oregano, or basil, crushed
  • 1/8 tsp black pepper
  • 1 1/2 lbs lean ground beef, ground lamb, or ground pork
  • 1/4 c ketchup
  • 2 T packed brown sugar
  • 1 tsp dry mustard
  • 1 T sweet chili sauce
Directions:
  1. Preheat oven to 350 degrees.
  2. In a medium bowl combine eggs and milk; stir in bread crumbs, onion, parsley, salt, sage, and pepper. Add ground meat; mix well. Lightly pat mixture into a loaf pan.
  3. Bake for 1 to 1 1/4 hours or until internal temperature is 160 degrees. Spoon off fat. In a small bowl combine ketchup, brown sugar, sweet chili sauce, and mustard; spread over meat. Bake for 10 more mins. Let stand 10 mins before cutting into slices.

    Some Homestyle Grub

    Shepherds Pie
    Ingredients:
    • 3 cups mashed potatoes
    • 1 1/4 lbs ground beef
    • 1/2 c chopped onion
    • 1 garlic clove
    • 1/2 tsp. salt
    • dash black pepper
    • 1 tsp. Italian seasoning
    • 2 1/2 c green beans
    • 1 can tomato soup
    • 1/2 c cheese
    Directions:
    1. Preheat oven to 350 degrees.
    2. Prepare the mashed potatoes; set aside.
    3. In large skilled cook meat and onion until meat is brown and onion is tender. Drain off fat. Add salt and pepper. 
    4. Stir in beans and soup. Pour into greased baking dish or casserole.
    5. Spoon mashed potatoes in mounds on beef mixture. Sprinkle cheese over potatoes. 
    6. Bake uncovered 30-35 mins or until mixture is bubbly and cheese begins to brown.

    Want a Twist on a Classic?

    We used to do semesterly get togethers with Justine and we would always make yummy food. (mostly Justine, she invited us over a lot of the time!) And this was one of the things she made us. SO GOOD. :) What really makes these burgers unique is that they are on buttered toast and they have a fried egg and beets.
    Aussie Burgers
    Ingredients:
    • hamburger
    •  bread
    • butter
    • onion
    • tomato
    • lettuce
    • beets
    • pineapple
    • egg
    • mushrooms
    Directions:
    1. Cook the hamburger patty however you like it. you can add chopped up onion, garlic powder, bread crumbs, Worcestershire sauce, salt and pepper... Whatever you like. And cook it through.
    2. Fry up an egg, once again however you want. Just a little salt and pepper will work just fine.
    3. Russell also fried up some mushrooms and they were super tasty, but you can do whatever you want!
    4. Chop up any fresh veggies you want to put on top; tomato, lettuce, onion...
    5. Toast the bread and butter it. You can put mustard, ketchup, mayo, bbq sauce, whatever you like on the bread as well.
    6. Put the rest of the toppings on the bread and try not to eat too quickly! :)

    An All American Meal

    Juiciest Hamburgers Ever
    Ingredients:
    • 2 lbs ground beef
    • 1 egg, beaten
    • 3/4 c dry bread crumbs
    • 3 T evaporated milk
    • 2 T Worcestershire sauce
    • 1/8 tsp cayenne pepper
    • 2 cloves garlic, minced
    Directions:
    1. Preheat grill for high heat.
    2. In a large bowl, mix the ground beef, egg, bread crumbs, evaporated milk, Worcestershire sauce, cayenne pepper, and garlic using your hands.
    3. Form the mixture into 8 hamburger patties.
    4. Lightly oil the grill grate. Grill patties 5 minutes per side, or until well done.
    Potato Wedges
    Ingredients:
    • 3 small potatoes
    • 1/2 T Msg (or just add extra salt)
    • 1/2 T onion powder
    • 1 c flour
    • 1/2 T salt
    • 1/2 T Cayenne pepper
    • 1/2 tsp Black pepper
    • 1/2 T Oregano flakes
    • 2 Chicken bouillon cubes, crushed
    • 1 large egg
    • 2 T Milk
    Directions:
    1. Combine all dry ingredients in mixing bowl.
    2. Mix well in separate bowl mix milk and egg.
    3. Heat oil to 400 degrees, dip potato wedges in milk/egg mixture and coat well, then place potato wedges in dry ingredient mix and coat well.
    4. Fry until golden brown
