I LOVE NAKED. Juice that is. :)

Naked Juice Mighty Mango

Ingredients
  • 2 cups (1 and 1/4 of a large mango) mango, peeled and cubed
  • 5 and 1/2 tbsp. orange juice
  • 1/4 cup apple juice
  • 1/3 (3 tbsp. mashed) ripe banana
  • 1 and 1/2 tbsp. lemon juice
Directions
  1. Combine all of the ingredients into a blender.
  2. Blend until smooth and no fruit chunks remain.
  3. Enjoy immediately.

Breakfast Smoothie Anyone?

This morning I wanted my usual breakfast smoothie but we were completely out of spinach! I've tried other greens before and almost puked they were so gross. I just haven't figured out how to do that yet. So I decided to try a different route. A beet. Yeah, we had a beet and fruit smoothie at Jamba the other day that was absolutely delish! So this is our rough draft... :)
Fruit and Beet Smoothie

Ingredients
  • 1 beet, peeled and diced small
  • 1 carrot, chopped 
  • 1 c strawberries
  • 1 frozen banana
  • 1 orange, peeled or juiced
  • 1 T flax seed
  • 1 c milk
  • 1 T honey (optional)
  • 5-6 ice cubes
Directions
  1. Throw all ingredients into blender and blend until creamy and smooth.

A fruity start to the day

Fruit Breakfast Smoothie

Ingredients
  • 1 can v8 fusion
  • 1/4 c coconut milk
  • 3 heaping T vanilla Greek yogurt OR plain Greek yogurt + 1 tsp honey + 1/2 tsp vanilla
  • 4 spinach cubes (directions below)
  • 1/2 c mixed frozen fruit
  • 1/2 of a fresh or frozen banana 
  • 1 T frozen cranberries
  • 1 T oats
  • 1 1/2 tsp flax seed
      
Directions:
  1. Throw all ingredients in a food processor or blender. Enjoy!
  2. Makes 2 servings.
Spinach Cubes
  1. Throw spinach into a blender. Add enough water to moisten it. Blend until smooth.  
  2. Pour into ice cube trays. Allow to sit for a couple hours until frozen through. 
  3. Take out of trays and place in freezer bag. Great for breakfast smoothies!

Another delicious breakfast or otherwise shake!

Pumpkin Pie Smoothie

Ingredients
  • 1/2 cup pumpkin puree
  • 1/2 very ripe medium-sized banana
  • 3/4 cup greek vanilla yogurt OR plain greek yogurt + 1/2 tsp vanilla + 5 drops liquid stevia
  • 1T maple syrup
  • 1/2 tsp pumpkin pie spice (recipe to follow)
  • 1 T flax seed
  • 1/4 tsp vanilla extract
  • 1 cup crushed ice
  • 1/2 c milk (dairy, coconut, or almond)
Directions
  1. Place all ingredients in a blender and puree until smooth, making sure the ice is completely crushed. 
Pumpkin Pie Spice

Ingredients
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoons ground ginger
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon ground allspice
Directions
  1. Combine all ingredients. If you make extra, store in an airtight container.

Wow, this is a good one!

Carrot Cake Green Monster

Ingredients
  • 1/2 C milk (dairy, coconut, or almond)
  • 1/8 tsp vanilla 
  • 1/8 C oats
  • 1 1/2 tsp coconut flour
  • 1/2 tsp cocoa powder
  • 1/2 t cinnamon
  • 1/2 tsp stevia
  • 1 c. spinach 
  • 2 small carrots
  • 1/2 of 1 frozen banana
  • 4-5 ice cubes
Directions
  1. Layer the ingredients: liquids, oatmeal, and powders on the bottom, then leafy greens/carrots, then bananas and ice cubes on top.  
  2. The heavy stuff on top helps weigh the leaves into the blender mechanism.  Blend away until smooth.

Being healthy is finally getting a little easier... :)

Sugar-Free Chocolate Milk

Ingredients
  • coconut oil
  • cocoa powder
  • stevia
  • water
  • milk
Directions:
  1. This is a recipe that is utterly up to you how much of each thing you use. All you need to do is put a spoonful of coconut oil in a pan and heat it just enough to melt it.
  2. Add a small spoonful of cocoa powder (it is very bitter, so add a small amount to start with and add more if you feel it's needed) to the coconut oil. Mix until it is well blended.
  3. Pour a bunch of stevia in. Once again this is up to you. Add as much as you think is needed, start small and add more. Add a small amount of water-just enough to help all of your ingredients come together nicely and create a type of syrup.
  4. Pour a tall glass of milk and add your chocolate syrup until the desired flavor is achieved and enjoy a tall glass of delicious sugar-free chocolate milk! YES.
  5. This could probably be used to make hot chocolate or poured on some healthy banana ice cream and you will have a dang good yet ridiculously healthy dessert! YES.

Healthy Breakfast Smoothies

Having PCOS makes it so that I have to avoid so many foods and I have to eat a lot of vegetables daily... Probably just the recommended amount. But it is very important that I squish these veggies into every meal daily if I can. So I've started trying out green shakes for breakfast. It is a great way to get in a full serving of veggies, fruits, carbs, and protein... Depending on what you put in your shake.
Nut Butter Green Smoothie

Ingredients:
  • 1/4 c oats
  • 1-2 c fresh spinach
  • 1/2 frozen banana
  • 4-6 ice cubes
  • 1 c milk (coconut is my favorite!)
  • 1 T peanut butter or almond butter
  • 1/2 plain Greek yogurt + 1 tsp vanilla (optional)
Directions:
  1. Put all ingredients in a blender. Blend until all ingredients are well mixed together.
Applesauce Green Smoothie

  • 4-6 ice cubes
  • 1 c milk
  • 1/4-1/2 tsp cinammon
Directions:
  1. Put all ingredients in blender. Blend until all ingredients are well mixed together.

Quick, Yummy Breakfast in a Drink!

Russ's Breakfast Shake
Ingredients:
  • 1/2 c yogurt
  • 1/4 c oats
  • 1/4 c fruit of choice -OR- peanut butter and chocolate to taste -OR- fruit and chocolate to taste
  • Milk to desired thickness
  • 4-5 ice cubes
Directions:
  1. Put all ingredients in blender or magic bullet and blend until smooth. Enjoy!

I told you I LOVE HARRY POTTER

In honor of the most awesome event of seeing the EPIC finale of Harry Potter, we decided to have a "Harry Potter feast". It did not even begin to compare to my sister-in-laws... She even sent owls to invite people! And they dressed in full costume... But hey, we did what we could with the time we had! :)
Fleur's Cream of Brie Soup

Ingredients:
  • 1/4 cup butter
  • 1 small onion, diced finely
  • 2-3 stalks celery, diced finely
  • 1/4 cup all-purpose flour
  • 4 cups chicken stock
  • 12 oz. (3/4 lb.) of brie cheese with the rind, cubed. (Apparently Brie is super duper expensive so bear that in mind if you decide to make this dish!)
  • 1/2 cup whole milk or half-and-half
  • salt and pepper
 Directions:
  1. Melt the butter over medium heat in a large sauce pot. 
  2. Add the onions and celery and sweat the onions (onions become translucent). 
  3. Whisk in flour while continuously stirring, cook for 3 minutes. 
  4. Whisk in chicken stock gradually. Let soup simmer for 10-15 minutes until celery is tender. 
  5. Gently stir in brie cheese and allow it to melt for around 5 minutes. 
  6. Pour soup into a blender (fill only to half full at a time). Hold top down with pot holder as soup is hot. Puree until smooth and pour into a clean pot. 
  7. Heat the soup to almost simmering on medium-low heat. 
  8. Stir in the milk or half-and-half. 
  9. Season with salt and pepper to taste.

English Toasties

Ingredients:
  • Bread, sliced
  • Mayo
  • Cheese
  • tomato, thinly sliced
  • onion, thinly sliced
  • sprinkle of garlic powder 
  • salt and pepper to taste
Directions:
  1. Spread a light layer of mayo on the bread. Place onion and tomato on bread, sprinkle with seasoning's, and add a layer of cheese on top.
  2. Put under broiler until cheese is melted.
**Note: My family went to England and we basically became toastie connoissuer's...mainly because we didn't like any other food we tried! They put all kinds of stuff on their toasties! It is whatever sounds good to you. Meat, different cheeses, different veggies, really whatever! This is just what we made. And it's delish. :) Enjoy!

    Pumpkin Juice

    Ingredients:
    • 2 cups of pumpkin, chopped up into chunks (This is almost impossible to find outside of the months of October and November!! We replaced it with butternut squash and it was still good)
    • 2 cups of apple juice
    • ½ cup of pineapple juice
    • 1 teaspoon of honey (more or less to your liking
    • Cinnamon 
    • Ginger 
    • Nutmeg
    • Allspice
     Directions:
    1. Juice the pumpkin pieces by squeezing through a cheesecloth or using a juicer if you have one.
    2.  Pour the pumpkin juice, apple juice and pineapple juice into a blender. 
    3. Add the honey (we recommend you start with 1 teaspoon, as you can add some later!) to the juices and blend thoroughly. 
    4. Add your spices (to taste). This might take some experimentation to get right. 
    5. Chill your pumpkin juice or serve iced and enjoy! 

    ButterBeer

    Ingredients:
    • 1 cup (8 oz) club soda or cream soda
    • ½ cup (4 oz) butterscotch syrup (ice cream topping)
    • ½ tablespoon butter
    Topping
    • 1/2 cup heavy cream
    • 2 Tbs powdered sugar
    Directions:
    1. Measure butterscotch and butter into a 2 cup (16 oz) glass. Microwave on high for 1 to 1½ minutes, or until syrup is bubbly and butter is completely incorporated.
    2.  Stir and cool for 30 seconds, then slowly mix in club soda. Mixture will fizz quite a bit. 
    3. Serve in two coffee mugs or small glasses; a perfectly warm Hogwarts treat for two!
    4. Pour heavy whipping cream into mixing bowl.
      Add powdered sugar and whisk briskly (you want consistency to be thickened slightly but still looses). It should act like a foam. Put on top of butterbeer as a foamy topping!
