So my mom has been meaning to try this recipe for a while but hasn't gotten around to it so she asked me if I wanted to be her guinea pig and go ahead and try this recipe. So we did and it is QUITE delicious I must say.
Red Potato Salad
Ingredients:
- 2 lbs unpeeled red potatoes
- ½ c white onion
- ½ c red pepper
- ½ c celery
- 1/3 c finely chopped dill pickles
- 2 boiled eggs, chopped
- 1 1/2 T. dill pickle juice
- 2 tsp. cider vinegar
- ½ c mayonnaise
- salt and pepper to taste
Directions:
- In a large pot, cover potatoes with salted cold water and bring to a boil over high heat. Cook until they're easily pierced with a fork, about 40 minutes.
- Meanwhile, combine onion, pepper, celery, pickles, and eggs in a large bowl. Drain potatoes and cut into half-inch pieces while still warm.
- Transfer to the bowl and sprinkle with dill pickle juice and cider vinegar. Toss salad gently with mayonnaise. Season with salt and freshly ground pepper. Chill before serving.
