Healthier Mashed "Potatoes"

- 1 lb sweet potatoes, cut into 1/2 in. cubes
- 1/2 head of cauliflower
- 1 tablespoon of cream cheese
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon of minced garlic
- 1/4 c butter
- 1/3 c sour cream or plain greek yogurt
- 1/4 c milk
- 1/8 tsp chicken base or bullion
- 1/2 tsp. salt
- 1/2 tsp pepper
Directions
- In a pot or dutch oven cook the potatoes, covered, in enough boiling lightly salted water to cover for 12 minutes or until tender; drain. Remove potatoes from pan.
- Add the butter to the pot and let it melt. Add the potatoes to the Dutch oven; mash with a potato masher until smooth. Stir in the sour cream, milk, salt, and pepper. Cook and stir over low heat until heated through. Transfer to a serving dish. If desired, place a dot of butter on top.
