Banana muffins
Healthy Banana Muffins
Ingredients:
- 1/2 c wheat flour
- 1 c gluten free flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1 banana mashed
- 1 1/2 c applesauce
- 6-8 dates
- 1 egg, lightly beaten
- 1/3 c melted butter
- 1/4 tsp cinnamon
Directions:
- Preheat oven to 375 degrees F. Lightly grease 10 muffin cups, or line with muffin papers.
- In a large bowl, mix together flour, baking soda, baking powder and salt.
- Blend together bananas, dates, applesauce, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.
- Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.
