Chicken Soup with Millet and Vegetables

Ingredients
- olive oil
- 1/2 roast chicken, shredded
- 3 celery sticks, sliced
- 2 carrots, sliced
- 4 green onions, sliced
- 1/2 millet
- 3 tsp. chicken bouillon
- 4 c water
- 1 tsp basil
- 1 bay leaf
- salt and pepper to taste
- Saute veggies in olive oil for a few minutes, until tender.
- Add millet and saute about 5 minutes more.
- Add chicken broth and seasonings.
- Cover and cook 20 minutes or until vegetables are cooked through. Add chicken and cook 5 minutes more.
