Yum.

Spicy Chicken Sandwiches
Ingredients:
Dressing
  • 1/4 cup mayonnaise
  • 2 T. chopped fresh cilantro
  • 1 tsp. lime juice
  • 1 garlic clove, minced
Sandwich
  • 2 eggs
  • 2 T. water
  • 3 T. hot sauce (such as Tabasco or Taco Bell)
  • 1 tsp. oregano
  • 1/2 tsp. salt
  • 2 skinless, boneless chicken breast halves
  • 1-2 cups tortilla chip crumbs
  • 2 T. olive oil
Toppings
  • 4 sandwich rolls
  • red onion slices
  • tomato slices
  • lettuce leaves
Directions:
  1. Mix the mayo, cilantro, lime juice and garlic; set aside. 
  2. Beat the eggs with the water, hot sauce, oregano and salt; pour into a large zip-loc bag. 
  3. Slice each chicken breast in 1/2 horizontally to form 4 cutlets. Add to bag; seal and marinate in refrigerator 2-8 hours, turning bag occasionally. 
  4. Place chips in a bag and beat with a rolling pin into fine crumbs. 
  5. Remove chicken from bag, coat completely with chips then cook in hot oil over medium heat until browned and done, about 3-5 minutes per side. 
  6. Create a sandwich with mayo, chicken and toppings.
