Spicy Chicken Sandwiches
Ingredients:Dressing
- 1/4 cup mayonnaise
- 2 T. chopped fresh cilantro
- 1 tsp. lime juice
- 1 garlic clove, minced
Sandwich
- 2 eggs
- 2 T. water
- 3 T. hot sauce (such as Tabasco or Taco Bell)
- 1 tsp. oregano
- 1/2 tsp. salt
- 2 skinless, boneless chicken breast halves
- 1-2 cups tortilla chip crumbs
- 2 T. olive oil
Toppings
- 4 sandwich rolls
- red onion slices
- tomato slices
- lettuce leaves
Directions:
- Mix the mayo, cilantro, lime juice and garlic; set aside.
- Beat the eggs with the water, hot sauce, oregano and salt; pour into a large zip-loc bag.
- Slice each chicken breast in 1/2 horizontally to form 4 cutlets. Add to bag; seal and marinate in refrigerator 2-8 hours, turning bag occasionally.
- Place chips in a bag and beat with a rolling pin into fine crumbs.
- Remove chicken from bag, coat completely with chips then cook in hot oil over medium heat until browned and done, about 3-5 minutes per side.
- Create a sandwich with mayo, chicken and toppings.
