Ingredients:
- 1 c flour
- 3/4 c cornmeal
- 2-3 T sugar
- 2 1/2 tsp baking powder
- 3/4 tsp salt
- 1 T butter
- 2 eggs, beaten
- 1 c milk
- 1/4 c oil or butter
- 1 c cheddar cheese
- 1 can green chiles
- Preheat oven to 400 degrees.
- In a medium bowl stir together flour, cornmeal, sugar, baking powder, and salt; set aside.
- And 1 T butter to a skillet or cake pan, place in oven for 3 minutes to melt butter and swirl around to coat bottom.
- Meanwhile, in a small bowl combine eggs milk and oil. Add egg mixture all at once to flour mixture. Stir just until moistened. Fold in cheese and green chiles.
- Pour batter into pan and bake 15-20 minutes or until a wooden toothpick inserted near center comes out clean. Cut into wedges, serve warm.
