Chocolate Chip Cookies

Ingredients
- 3/4 c oatmeal
- 1 c whole wheat flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/4 c coconut oil
- 1/4 c unsweetened applesauce
- 1/3 c light brown sugar
- 1 egg
- 1 tsp. vanilla
- 3/4 c dark chocolate chips
Directions
- Preheat oven to 350 degrees.
- Grind oatmeal in blender or food processor until flour consistency. Transfer to a medium bowl and stir in flour, baking soda and salt.
- In a separate bowl soften coconut oil in microwave about 15 seconds. Cream together oil and sugar. Add applesauce, egg, and vanilla, mix until smooth and creamy.
- Add in the dry ingredients until just combined.
- Add chocolate chips to the cookie dough and mix until just combined.
- Spoon cookie dough onto a greased cookie sheet. Bake for 10 minutes or until the tops are golden. If the cookies have a tendency to flatten, put the dough in the fridge between baking.
- Cool the cookies for 2 minutes on the cookie sheet before transferring to cool completely.
