Russ' Mexican Rice
Ingredients:
- ½ small onion, chopped
- 1 garlic clove, diced
- 1 sweet pepper, diced
- 1 T. olive oil
- 1 c. rice
- 1 1/3 c. water
- 1 c. salsa
- 1 tsp. seasoned salt
- ½ tsp. cumin
- Hot sauce
Directions:
- Saute onion, garlic, and pepper in olive oil until onion starts going translucent.
- Add rice and seasoning (salt, cumin) and continue to cook until rice goes opaque.
- Add water, salsa, and hot sauce. Bring to a boil.
- Put lid of and simmer for 20 minutes.
