Let's Have a Fiesta!

Russ' Mexican Rice
Ingredients:
  • ½ small onion, chopped
  • 1 garlic clove, diced
  • 1 sweet pepper, diced
  • 1 T. olive oil
  • 1 c. rice
  • 1 1/3 c. water
  • 1 c. salsa
  • 1 tsp. seasoned salt
  • ½ tsp. cumin
  • Hot sauce
Directions:
  1. Saute onion, garlic, and pepper in olive oil until onion starts going translucent.
  2. Add rice and seasoning (salt, cumin) and continue to cook until rice goes opaque.
  3. Add water, salsa, and hot sauce. Bring to a boil.
  4. Put lid of and simmer for 20 minutes.
