Pulled Pork Sandwiches
Ingredients:
- 1 (2 pound) pork tenderloin
- 1 (12 ounce) can root beer
- 1 (18 ounce) bottle barbecue sauce
- 8 hamburger buns
- Coleslaw
- Place the pork tenderloin into a slow cooker and pour the root beer over the meat. Cover and cook on low until the pork falls apart and shreds easily (about 6 to 7 hours).
- Drain the juices and pull the pork apart with two forks until it is shredded. Stir in BBQ Sauce and warm in the slow cooker.
- Place some of the pork onto the bottom of each hamburger bun, top with coleslaw and place the other half of the bun on top.
Coleslaw
Ingredients:
- 1 (16 ounce) bag shredded cabbage and carrot mix
- 2 tablespoons onion, diced
- 2/3 cup creamy salad dressing (Miracle Whip or Mayo)
- 3 tablespoons vegetable oil
- 1/4 cup white sugar
- 1 tablespoon white vinegar
- ¼ teaspoon salt
- ½ teaspoon poppy seeds (we didn't have poppy seeds so we just replaced this with fresh savory and it was pretty tasty!)
- In a large bowl combine coleslaw mix and diced onion.
- In a medium bowl whisk together salad dressing, vegetable oil, sugar, vinegar, salt and poppy seeds. Pour dressing over the cabbage mixture and toss to coat.
- Chill at least 2 hours before serving.
We found this recipe at our usual recipe blog. It was pretty tasty. Mostly simple! :)
