Onion Soup with Cheese Crostini

Ingredients:
- 1 tsp. butter
- 2 cups thinly sliced onion
- ¼ tsp. sugar
- 1/8 tsp. pepper
- 2 cups chicken broth
- 1 ½ cup water
- 2 T. white wine vinegar
- 1/8 tsp. thyme
- 1 tsp. Worcestershire sauce
- French bread, slice or cut into chunks
- Grated swiss or cheddar cheese
Directions:
- Melt butter in a medium saucepan over med. heat. Add onion, sugar, and pepper to pan. Cook 15 min. or until golden brown, stirring occasionally. Stir in vinegar; cook 2 min. or until vinegar almost evaporates.
- Add broth, 1 ½ cups water, thyme, and Worcestershire sauce; bring to a boil.
- Reduce heat and simmer 15 min.
- Ladle into ovenproof soup bowls and place on a baking sheet. Top each with a slice of bread and a sprinkling of cheese. Broil until cheese melts. OR: place bread on a cookie sheet, sprinkle with cheese and broil until cheese is melted. Place a slice on top of each serving of soup.
