I don't mind being a guinea pig!

 So my mom has been meaning to try this recipe for a while but hasn't gotten around to it so she asked me if I wanted to be her guinea pig and go ahead and try this recipe. So we did and it is QUITE delicious I must say.
Red Potato Salad

Ingredients:
  • 2 lbs unpeeled red potatoes
  • ½ c white onion
  • ½ c red pepper
  • ½ c celery
  • 1/3 c finely chopped dill pickles
  • 2 boiled eggs, chopped
  • 1 1/2 T. dill pickle juice
  • 2 tsp. cider vinegar
  • ½ c mayonnaise
  • salt and pepper to taste
Directions:
  1. In a large pot, cover potatoes with salted cold water and bring to a boil over high heat.  Cook until they're easily pierced with a fork, about 40 minutes.  
  2. Meanwhile, combine onion, pepper, celery, pickles, and eggs in a large bowl.  Drain potatoes and cut into half-inch pieces while still warm.  
  3. Transfer to the bowl and sprinkle with dill pickle juice and cider vinegar.  Toss salad gently with mayonnaise.  Season with salt and freshly ground pepper. Chill before serving.
