Hearty Bacon Potato Chowder
Ingredients:
- 8 slices of bacon, chopped
- 1 cup chopped onion
- 1 cup chopped celery
- 2 med. potatoes, peeled and cubed
- 1 cup chicken broth
- 1 can Cream of Mushroom soup
- ½ cup sour cream
- 1 ½ cups milk
- 1 T. dried parsley
- Salt and pepper
Directions:
- In a saucepan, cook the bacon until slightly browned. Add onion and celery and cook until tender. Pour off the drippings. Add potatoes and broth, salt and pepper if needed.
- Cover, simmer 12-15 minutes, or until potatoes are tender.
- Stir in soup, sour cream, milk, parsley and salt and pepper to taste. Heat Through.
Mine is definitely ice cream. Although, this might run a close second. I can't wait to try it!
