Russ' Egg Drop Soup
Ingredients:
- 3 c water
- 3 chicken boullion cubes
- 1 chopped green onion
- ½ tsp salt
- ½ – 1 tsp pepper
- 1 – 2 eggs, beaten
- 1 – 2 tsp soy sauce
- 1/8 tsp ginger powder
- ¼ tsp basil
- 1/8 tsp thyme
- ½ – 1 tbsp corn starch
Directions:
- Bring water and bullion to a boil, add onion, salt, pepper, ginger, basil and thyme.
- Lower heat to a simmer. While stirring with a whisk, slowly pour in beaten eggs.
- After the eggs have been mixed in, add soy sauce.
- Mix the cornstarch with twice as much water. Pour in the cornstarch mixture as you stir.
- Allow to cook for a couple more minutes, or until thick.
