Ingredients:
- Onion, sliced into 6 big chunks
- Tomato, sliced into large chunks
- Annaheim pepper
- Olive Oil
- Salt and pepper
- Parmesan Cheese
- Preheat oven to 350 degrees.
- Place vegetables on tray. Coat liberally with olive oil, making sure to get it between each layer of the onion.
- Sprinkle with salt and pepper to taste.
- Sprinkle with Parmesan cheese.
- Bake for about 15 to 20 minutes. Check regularly, you want the veggies to be heated through with small spots of brown.
