Caramelized Bacon

- 4-8 Bacon slices
- Brown sugar
- dash cayenne pepper, optional
- Pre-heat the oven to 400 degrees.
- Line a baking sheet with foil. Put cooling rack on baking sheet.
- Heavily cover both sides of each slice of bacon in the brown sugar, add dash of cayenne if desired, and arrange the slices on the cooling rack.
- Bake for 15 to 25 minutes (until the bacon is well caramelized).
- Pull baking sheet out of oven and allow the bacon to cool until slightly hardened.
