Roasted Sweet Potatoes with Chili Dressing

- 2 sweet potatoes, peeled and cut into large sticks
- 1/2 large onion, sliced
- 2 T. olive oil, divided
- salt and pepper to taste
- juice of one lime
- 1 tsp chili powder
- chopped cilantro (optional)
- Pre-heat oven to 400 degrees.
- Put potatoes and onions on a large baking sheet. Drizzle with 1 T olive oil and toss to coat. Spread in a single layer. Sprinkle with salt and pepper.
- Roast, turning occasionally until crisp on the outside and tender on the inside, approximately 35-45 minutes.
- Remove from oven.
- Whisk 2 T oil with juice and chili powder and a pinch of salt and pepper.
- Toss fries with dressing and sprinkle cilantro on top. Serve warm.
