A healthy soup

Chicken Soup with Millet and Vegetables

Ingredients
  • olive oil
  • 1/2 roast chicken, shredded
  • 3 celery sticks, sliced
  • 2 carrots, sliced
  • 4 green onions, sliced
  • 1/2 millet
  • 3 tsp. chicken bouillon
  • 4 c water
  • 1 tsp basil
  • 1 bay leaf
  • salt and pepper to taste
Directions
  1. Saute veggies in olive oil for a few minutes, until tender.
  2. Add millet and saute about 5 minutes more.
  3. Add chicken broth and seasonings.
  4. Cover and cook 20 minutes or until vegetables are cooked through. Add chicken and cook 5 minutes more.
